During a visit to my cousin who was in the UK for a short visit, we were talking about life, family and business when his wife phoned. He informed her there was a surprise guest with him, and switched on his speaker phone as she laughed with delight when he revealed it was me.

‘Austino (pronounced Ostainoh!) how now? how business?’ she queried. As I was responding, her husband interjected. ‘They have just been shortlisted as Finalists in the UK Caribbean Food Awards’. She sounded thrilled, made some appropriate comments, paused and then asked ‘… How are you even doing it, you that did not know how to cook?!’ (Only she would say such things to me ha ha)

We burst into laughter as I meekly accepted her supremacy in this area, jokingly thanking her for ‘insulting’ me.

The fact is that she was telling the truth. I was a regular at their home where she was always able to whip up the most delicious dishes in record time. As I drove home later on I was thankful for that reminder about who I USED TO BE, and also amazed that anybody can be or do whatever they put their mind to!

Today, Jerk Station gets amazing reviews, and we have been nominated for several awards for our food, service and business. Yet, only a few years ago, I was going to family friends to learn how to cook jollof rice. Around the same time, a Caribbean take away owner (who had just met me through a distant associate) offered me a (free) crash course training with his chef to learn the inner workings of a Caribbean restaurant. I had (almost) ZERO skills, ZERO knowledge and even less money. My initial commercial equipment were borrowed. I bought my first insulated box for £3.50 from a charity shop at Upminster. Yet here we are today…

I am saying all this to say that YOU CAN DO almost anything you decide to do! However, you need to commit, and STAY IN THE GAME. You’ve got to be in it, to have any chance of winning. You don’t need to have nearly as much as you think you do, to launch out. Get started and you’ll be amazed how support comes from surprise quarters.

Let 2024 be the year to get that dream off the ground.
